Corn Bread

1 1/2 cups cornmeal
1 cup flour
3 tsps baking powder
1 tsp salt
1 egg
Milk

Mix together dry ingredients. Add egg and enough milk to bring to the right consistency. Grease a cast iron skillet (or baking dish) and lightly sprinkle with corn meal. Pour in the batter and bake at 350 until done.

Variation: Spoon batter into hot skillet with oil and fry up like little pancakes!
