1 bunch celery
4 cups boiling water
1 bay leaf
1 large potato
2 Tbs butter
1 Tbs whole wheat flour
1 Qrt milk
salt & black pepper to taste
pinch nutmeg
Cut potato and celery into small pieces and cook in hot water with bay leaf till celery is tender. Drain water and discard bay leaf.
Heat butter in sauce pan, add flour and stir till blended. Add milk and stir till blended. Stir mixture into pot with celery. Season to taste.
