Old Time Cinnamon Rolls

Take left over biscuit dough and pinch off about the size of a biscuit and roll out thin. In the center put 2 Tbs butter. Put sugar and cinnamon on the butter and fold the dough over and bake at 350 until done.

Carrot Cake

2 cups flour
2 cups sugar
1 to 2 tsp cinnamon
2 tsps baking powder
3 tsps baking soda
1 tsp salt
1 1/2 cups oil
4 eggs
3 cups shredded carrots
1 cup chopped nuts

Mix flour, sugar, cinnamon, baking powder, soda, salt, oil and eggs. Mix well then stir in the carrots and nuts. Use 3 layer pans. Bake at 350 for 45 minutes. Cool and frost.

* For frosting, combine 1 8oz pkg. cream cheese, 1 stick Oleo (margarine) and 1 box powdered sugar. Mix well.


Rhubarb Cake

4 cups rhubarb, cut up
1 cup sugar
2 3oz pkgs strawberry jello
1 box white cake mix
Miniature marshmallows

Cook rhubarb with sugar until soft. Add the pkgs of jello, mix and set aside to cool. Mix up the cake mix by directions on box. Line cake pan with miniature marshmallows. Pour cake mixture over the marshmallows. Drizzle rhubarb mixture over the cake mix. Bake at 350 for 30-35 minutes.



Apple Holiday Cake

1 1/2 cups sugar
1/2 cup butter
2 eggs, well beaten
2 cups flour
1 tsp baking soda
1 tsp baking powder
1 tsp salt
1/2 cup walnuts
1/2 cup coconut
4 cups diced unpeeled apples

Cream together sugar and butter. Add eggs and mix. Sift together flour, baking soda, baking powder and salt. Add to creamed mixture. Add in walnuts, coconut and apples. Mix well and pour into loaf pan. Bake 35-40 minutes at 350.



Pineapple Nut Cake

2 cups flour
2 cups sugar
2 tsps soda
2 cups crushed pineapple, drained
2 eggs
1 cup walnuts

Mix all together and pour into greased 9x13 pan. Bake at 350 for about 40 minutes. Cool and frost with vanilla frosting.



Fruit Cocktail Cake

1 cup flour
1 cup sugar
1 tsp soda
1/4 tsp salt
1 egg, beaten
1 tsp vanilla
2 cups fruit cocktail, drained with 1/2 cup syrup reserved
1/4 cup brown sugar
1/2 cup cup chopped nuts

Mix flour, sugar, soda and salt together. Add egg, vanilla, fruit cocktail and reserved syrup. Beat well. Pour into greased 9x13 pan. Spread nuts and brown sugar on top of batter. Bake for 1 hour at 350.
