Cauliflower Salad

1 head cauliflower
1 bunch green onion
1 bunch radishes
1 Tbs french onion dip

Cut cauliflower and let stand in salt water for 3 hours then drain. Chop radishes and onions. Add dip and mix.

Creamy Fruit Salad

1 can 8 1/2 oz fruit cocktail, drained
2 bananas
1 small apple, diced
1/2 cup green grapes, halved
3 maraschino cherries, halved
1/4 cup miniature marshmallows
1/2 cup whipping cream, whipped
Strawberries

In a large bowl combine fruit cocktail, banana, apple, grapes, cherries, marshmallows. Fold in whipped cream. Decorate with strawberries.

Banana Waldorf

2 cups diced bananas
1 1/2 cup diced apples
1 cup diced celery
1/2 cup chopped walnuts
1/2 cup yogurt
1 Tbs lemon juice

Use well chilled fruit. Combine all ingredients well and serve. Garnish with fresh spinach leaves or alfalfa sprouts.



Grandma Ramey's Wilted Lettuce

Young fresh lettuce leaves
Young fresh mustard leaves
Young fresh spinach leaves
Green onion
Bacon or Ham drippings
2/3 cup water
1/2 cup vinegar


Cut green onions up with lettuce, mustard and spinach leaves. Boil together bacon or ham drippings with about 2/3 cups water and 1/2 cup vinegar. While still boiling pour over the lettuce mixture.



Orange and Onion Salad

2 oranges
1 diced avocado
1 grapefruit
1 small red onion, thinly sliced and separated into rings
1/3 cup yogurt
2 Tbs chopped walnuts
Salad greens or spinach leaves
salt and pepper to taste

Peel and section the fruit then cut each section in two or three pieces and put in a bowl. Add all the juice from the fruit to the onion then add the avocado and yogurt. Toss and chill. Sprinkle with nuts, salt and pepper and serve on salad greens.



Sweet Pea Salad

4 cups peas
1 cup american cheese
5 slices bacon, fried crisp and broken up
2 medium pickles, coarsely chopped
2 Tbs chopped onion
2 Tbs chopped olives
2 Tbs Pimentos, sliced
3 eggs, hard boiled, 2 chopped and 1 sliced
2 Tbs pickle juice
1/2 cup mayonnaise
Paprika

Put all ingredients into a large bowl except the mayonnaise, pickle juice and sliced egg. Combine the pickle juice into the mayonnaise and then mix into salad. Arrange sliced egg on top of salad. Sprinkle lightly with paprika.



Broccoli Salad

8 cups broccoli, cut up
1 medium red onion, chopped
2 cups sharp cheddar cheese, shredded
1 lb bacon, fried crisp and crumbled
1 cup mayonnaise
1 Tbs red wine vinegar
1/2 cup sugar

In large bowl, mix together broccoli, onion, cheese and bacon. Whisk together remaining ingredients and pour over salad. Mix it up and then refridgerate for 12 hours.
